You can watch and un-watch a complete tree of pages (a page an all of its descendants) with just one click. The two functions are in the Watch menu.
Manage your tree watches from your personal menu
You can access all of your tree watches by using the menu item in your personal menu.

You can directly jump to all pages you have active tree watches on from here and remove the tree watches from here as well.

Tree View can be used to watch or un-watch a tree of pages (a page an all its descendants) with just one click. The app is open source and free for Confluence Server users with this promotion link. The repository is here: https://bitbucket.org/apurde/tree-view
